Choose your dough
Each dough has its own character — aroma, color, and that all-important chew (koshi). Taka explains how flour, water and kansui change the noodle, then helps you pick the dough that matches the bowl you dream of.
Our Story
Tucked into a quiet neighborhood of Yokohama stands a small noodle factory our grandfather built. For three generations it has supplied fresh ramen noodles to local ramen shops — the kind of place travelers never see, where flour, water and decades of craft become the soul of a bowl of ramen.
Today my brother Taka runs the factory, carrying on the techniques our grandfather and father refined over a lifetime. When you visit, he opens the doors of a real working workshop — not a showroom — and puts the tools of his trade in your hands.
I'm Akiko. I spent years teaching Japanese in Australia, the United States and China, and what I loved most was watching strangers become friends over food. So we created this experience: first you make noodles with Taka at the factory, then we walk to my home for a home-cooked ramen dinner — sometimes joined by my husband, my daughter and my son. And if you love dogs, our two toy poodles, Teddy and Milky, will be delighted to say hello during your visit.

What makes this different
Most ramen classes hand you pre-made noodles. Here, you make real decisions with real professional equipment — the same doughs and cutting blades we use for the ramen shops we supply.
Each dough has its own character — aroma, color, and that all-important chew (koshi). Taka explains how flour, water and kansui change the noodle, then helps you pick the dough that matches the bowl you dream of.
Professional noodle-cutting blades come in numbered widths. A wide cut gives you thick, wavy noodles that grip a rich broth; a narrow cut gives delicate, straight noodles for a cleaner sip. You cut your own — and taste the difference at dinner.
Your noodles travel home with us and go straight into your bowl the same evening — you'll never taste ramen fresher than this.
Inside the factory
Flour in the air, machines our grandfather chose, and Taka's hands showing you the way — these photos were taken during real evenings with our guests.
The Experience
Five unhurried hours, from factory floor to family table.
Look for me at the East Ticket Gate holding a sign — Kikuna is an easy direct ride from Shibuya or Shin-Yokohama. From here, your evening in our neighborhood begins.
Taka shows you how ramen noodles are really made — the machines, the flour, the feel of the dough. Then it's your turn: choose your dough, roll it, and cut your own noodles with a professional blade.
Ten minutes on foot through everyday Yokohama — the streets, shops and sounds of a real Japanese neighborhood most visitors never get to see.
Aprons on! We fold gyoza, prepare a Japanese salad with crispy sardines and tofu, season the broth, and top your ramen with tender chashu pork and a soft-boiled marinated egg — your noodles at the center of it all.
We toast with sparkling plum wine (or a soft drink), slurp the ramen you made from dough to bowl, and finish with a matcha dessert. Expect stories, laughter and second helpings.
I'll walk you to the bus stop for Kikuna Station or Tsurumi Station with a full stomach, a camera roll of memories, and bragging rights: you've made ramen the way Yokohama's noodle craftsmen do.

Very. Kikuna Station is about 30 minutes direct from Shibuya on the Tōkyū Tōyoko Line, and a short hop from Shin-Yokohama if you're arriving by Shinkansen. I'll meet you right at the East Ticket Gate.

Not at all. We'll toast with a non-alcoholic sparkling drink instead of plum wine — the kanpai is just as festive.
